I love Spinach, may be not more than Popeye but my love is quite equivalent to it, salad, soup , sautéed or curried Spinach works for me in every form. Here is one of my favourite recipe for Spinach. A really healthy and tasty curry.
Palak Paneer, one of the best combinations, white creamy paneer cubes in green luscious, mildly spiced spinach gravy.
In this recipe I have used homemade cottage cheese, as I love the freshness and creaminess it brings to the curry.
This is a quick version, This recipe is good for 3-4 people
Ingredients
- Spinach – 500 Gms
- Tomatoes- 2
- Onion – 2
- Garlic – 3-4 Cloves
- Ginger – A small knob
- Green Chili- 2
- Coriander seeds – half spoon
- Anise – Half spoon
- Cumin – Half spoon
- Red chili powder- Half spoon
- Salt- As per taste
- Garam masala- half spoon
- Dry Mango Powder- 1 spoon (Can substitute with lemon)
- Oil/Butter- 2-3 Spoon
- Cream- 3-4 Spoon
- Paneer – 1 Cup – Cubed
Method
- Wash Spinach and boil along with tomatoes and onion (I pressure cooked it for 1 whistle as I was in a hurry)
- Once done remove spinach and place in ice water as it helps it retain its green color (This step is optional)
- Once Boiled make a puree of spinach, tomato and onion
- Finely chop Ginger, chili and garlic (or make a paste of you prefer)
- Heat oil in a pan, add cumin, coriander seeds and anise and let them roast for a min or two
- Now add chopped ginger, chili and garlic and cook them for 2-3 min on low flame
- Add in spinach puree, add salt, red chili powder and dry mango powder and mix well
- Cook the puree until it thickens (5-10 min, depending on the amount of water you added for boiling and pureeing, keep the water less)
- Once it has reached desired consistency add in cream and give it a swirl
- After a minute add in paneer cubes, gently mix and remove from the heat
- Serve hot with chapati, kulcha, naan or rice (I served it with Stuffed Kulcha )
