I love Uttapam, there I said it. Just a plain uttapam made with butter, I can gulp it down without feeling the need of any chutney or sambhar to go with it. I make dosa or uttapam once a week, this time I thought to get a little creative with it. Instead of the original battter , I made a mix of rawa (Semolina) and Quinoa making it very healthy and they came out so tasty that this recipe is going in my books more frequently. Here is the recipe I used, it made 6-7 uttapams
Ingredients
- Quinoa- 1 cup
- Semolina (rawa)- Half cup
- Diced Mix veggies- 1 Tomato, 1 Onion , 2 chilies, Coriander (A bunch)
- Curd- half cup
- Salt – As per taste
- Olive oil/ butter/ oil- for cooking
Method
- Soak quinoa for an hour
2. Once Soaked Mix curd, Quinoa, rawa and blend till smooth (Add a bit of water as needed to make a smooth battter)
3. Once done add salt and adjust water to reach the right consistency and let it rest
4. After half hour mix again and adjust water as Semolina soaks up water
5. Get the veggies ready till that time
6. Heat the pan on medium, when slightly hot add the batter and roll it out like uttapam. Cool down the pan with some water every time you pour a new one
7. Top it with veggies, a spoon of oil around or butter and let it cook
8. Once the top side stops bubbling, turn it over and let it cook on medium
9. Once done remove and serve hot with Chutney or Sambhar or both
