Thai food, my love affair with Thai began when I moved to Singapore. Twice a week I would eat thai food for my lunch. It is a complete sensation of a meal, it has crunch, spice, sweet, savory and sour in every bite, making it moreish and oh so amazing.
I made these noodles sometime back and totally forgot about them, yesterday I suddenly got a reminder by my brain, brain really do work mysteriously. Anyways, so here it is, I made these and documented these so that you can enjoy this quick, easy and delicious noodles
Serves 2
Ingredients
- Noodles – Any noodle that you would want will work, get 2 serving, boiled and ready
- Roasted crushed peanuts
- Julienne Red capsicum- 1
- Mushrooms- 5/6 chopped
- Oil- 2 Spoon
- Coriander leaves for garnish (Optional)
For the sauce
- Peanut Butter (Smooth) – 2 Spoonful
- Soy Sauce – 1 Spoon
- Vinegar – 1 Spoon
- Sriracha – 2 spoon (Or as you like it spicy) – If you do not have sriracha, replace with any spicy sauce you like
- Sesame Oil – 1 Spoon (Replace with any oil if you can’t find sesame)
- Minced Garlic- 3 cloves
- Brown Sugar – 1/2 Spoon or replace with honey
Method
- In a bowl, mix all the sauce ingredients and give a good mix, your sauce is ready
2. Heat a pan, add oil and on high heat, stir fry the mushroom and capsicum
3. Add noodles when veggies done
4. Now Add sauce and give it a good mix
5. Cook for 2-3 min, stirring on high heat
6. Take down, serve in a bowl , garnish with peanuts and coriander
7. Enjoy 🙂
