Me and my husband completed our 5 years of marital bliss, I love him totes and enjoy cooking for him. We were swarmed by work so just decided a quiet dinner out and a movie, somehow lunch time we both ended up at home and how could I not make something special for him and thats when I came up with this curry under 30 Min.
It is just an extension of my Beetroot kofta currry but I have removed potatoes and added carrots to make it a little more healthier version.
So here it goes, this recipe serves 2-3
Ingredients
For Gravy
- Spinach- 500 Gms
- Tomatoes- 2
- Onion- 2
- Garlic- 2-3 cloves
- Ginger- small piece
- Green chilli- 2
Spices
- Bay leaf-1
- Cumin Seeds- half spoon
- Red chili powder- To taste (I added half spoon)
- Dry Mango Powder- 1 spoon
- Red chilli whole – 2
- coriander Seeds- half spoon
- Ani seeds – half spoon
- Asafoetida- 1/2 pinch
For Kofta
- Carrots- 2
- Beetroot – 1
- Gram Flour – 2-3 spoon (Just to bind the koftas)
- Red chili Powder- Half spoon
- Salt – As per taste
- Kasuri Methi – Half spoon
- Dry Mango Powder – Half spoon (Or lemon juice)
- Oil to fry
Method
Koftas
- Grate carrots and beetroot add salt and leave for a couple of minutes
- Remove excess water by pressing and add remaining of the ingredients and start making small balls (Don’t throw the water, it can be used for gravy or chapati)
- Fry Koftas and set aside
For Gravy
- Boil Spinach, tomatoes and onion together, you can pressure cook it for 1 whistle and make a puree once cooked (This is a short version, for longer elaborated version follow beetroot kofta curry recipe)
- Make a paste of ginger and green chili, mince garlic
- Heat a pan and add in oil, now add in cumin seeds, coriander seeds and aniseed along with bay leaf and let them roast till cumin turns brown (Keep flame low)
- Add in minced garlic and mix well, now add in ginger chili paste and let them cook for a min
- Add in red chili powder and mix 2-3 spoon of water, Now add the spinach puree
- Let the puree cook on simmer covered and let it reduce to a nice consistency
- Once done take it out in serving bowl and add in koftas, serve hot with chapati, paratha or rice
