I don’t think I say it enough but I Love Potato, I mean I absolutely love them! They are so versatile, filling and makes up so many tasty dishes.
This is one such quick recipe of the humble potato
This recipe serves 2-3 people as side
Ingredients
- Potatoes – 2 Large or 3 Medium size
- Green Chili – 1-2
- Cumin seeds – 1 spoon
- Coriander seeds – 1/2 spoon
- oil 2-3 spoon
- Salt – As per taste
- Red Chili powder – 1/2 spoon
- Turmeric Powder – 1/4 spoon
- Dry Mango Powder – 1 Spoon (Can substitute with lemon juice)
- Coriander leaves – 1 spring for garnishing
Method
- Cut washed potato into thin wedges and slit the green chili lengthwise and keep aside
- Heat oil in pan and add cumin seeds
- When cumin starts to turn brown add coriander seeds in it and let them roast on simmer for a minute (Or less than a minute don’t let them burn you want aromatic brown cumin)
- Add green chili and let it sizzle
- Add potatoes and all the masala’s to it and give it a nice mix
- Let them cook covered on a low flame, keep mixing them and keep a check so they are not sticking to bottom.
- Cook untill potatoes are done (If they are sticking much add some water, 1-2 spoons at a time, we want them to be dry not watery)
- Serve hot with rice or bread garnished with coriander
