Pav Bhaji has to be most interesting preparation of mix vegetables. Pav Bhaji is a typical street food from Mumbai, it is mashed vegetables cooked in special spice blend topped with loads of butter and served with buttered pav (Bread)
I love Pav bhaji, it is my absolute favorite and have done many trials at home to get that perfect taste and consistency. This is my version of the street food
This recipe serves 3-4
Ingredients
- Potatoes – 4
- Peas – 1 cup
- Cauliflower – 1 small floret
- carrots 2
- Onion – 2
- Garlic – 2-3 Cloves
- Ginger – 1 small knob
- Green chilli 2
- Lemon 2
- Butter – 2-3 Spoon for cooking (Rest for topping the bhaji depends on your preference, though butter adds taste)
- Pav Bhaji Masala – 2-3 spoon
- Salt – As per taste
Method
- Pressure cook potatoes, cauliflower and carrots until done and mash them (Vegetable choice can be managed as per preference, I have made this by using just potatoes and peas and turned out good)
- Boil Peas and keep aside
- Finely Chop Onion and tomatoes
- Make a paste of Ginger, Garlic and Green chillis
- Heat a pan, melt butter (Make sure butter doesn’t burn) add ginger garlic paste and let it sizzle for a min
- Add in onions and let them cook until transparent
- Add in tomatoes, add salt and pav bhaji masala and let it cook till done.
- Add in the mashed vegetables and give it a good mix, the consistency should not be dry, if it gets dry add water to adjust
- Let it simmer for another 5 min
- Add peas and mix again
- Serve it hot topped with butter and a squeeze of lemon along with buttered Pav
- Enjoy!!
