Paneer Adraki

Paneer (Cottage cheese) is a part of Indian food, we love it in curry, a perfectly stuffed paratha of paneer can be described as a piece of heaven in every bite!

I am a foodie and I it is not a secret that I love going out and exploring various places and taste newer food, during one of such escapade I came across this wonderful combination of paneer and a rich gravy called “Paneer Dhaniya Adraki” and I instantly fell in love with this wonderful combination of a rich gravy mildly spiced by ginger and other Indian spices.

Here is my version of the curry I love!

This recipe serves 2-3

Ingredients

  • Paneer / Cottage cheese – 250 Gms (diced into cubes)
  • Oil or butter 2-3 Spoons
  • Tomatoes – 4
  • Onion – 2
  • Garlic- 1-2 cloves minced
  • Ginger- 2-3 spoon diced
  • Salt- to taste
  • Chili powder – half tea spoon
  • Turmeric – 1/4 teaspoon
  • Kasoori Methi – 1-2 Pinch
  • Dry Mango powder- 1 spoon (Or 1 lemon juice)
  • Bay leaf – 1
  • Cashew – 4-5 9Optional)
  • Cream – half cup

Method

  1. Chop onions roughly and cook them for 3-5 min, once soft put them in food processor along with garlic and make a smooth paste
  2. Soak cashew in water for 30-40 Min, and make a smooth paste
  3. Make a smooth puree of tomatoes
  4. Put oil in the pan, once hot add kasoori methi and Bay leaf and ginger and let them cook for a min on low flame
  5. Take red chili powder and turmeric powder in a bowl and add 1 spoonful of water and make a paste, add this paste to the pan (you can add more water if the paste is too thick)
  6. Now add in onion garlic paste, add salt and let it cook for 3-4 min
  7. Add in tomato puree and give it a mix, and let cook on a low heat
  8. Add in cashew paste (You can skip it if want) and let it reduce to nice gravy consistency
  9. Now add in diced paneer and a cup of water and let it simmer for 5-10 Min
  10. Add in cream at last and give it a mix, let it cook for another minute before you take it off the heat
  11. Adraki paneer is ready , serve it with Roti, Naan or Rice
