Kadhai Aloo (Spiced Potato Curry)

This potato curry is one of the simplest recipe, it is inspired from Kadhai Paneer a traditional curry made of Paneer (Cottage cheese) and capsicum.

So here we go for a quick and tasty curry made of simple and fresh ingredients

This recipe serves 2-3

Ingredients

Spices

  • Salt- To taste
  • Red chili powder Half tea-spoon
  • Turmeric Powder – Less than Half tea-spoon
  • Coriander Seeds – 1 teaspoon
  • aniseed (Saunf)- 1 teaspoon
  • Bay leaf 1
  • Garam Masala- Half tea-spoon
  • Jeera (Cumin seeds)- Half tea-spoon
  • Dry Mango Powder (Amchur powder)- Half tea-spoon

Vegetables

  • Potato- 3
  • Tomatoes- 3
  • Onion- 2
  • Capsicum – 2
  • Ginger- a small piece
  • Garlic – 2 Cloves

Essentials

Oil – 2-3 Spoon

Method

  1. Boil Potatoes with a pinch of salt, make sure they are still firm and not mushy
  2. Once Boiled, cut them in half and prick them with toothpick or fork gently (If you would like you can shallow fry them as well, I skipped this step as I wanted to keep it more healthy)
  3. In a blender blend ginger and garlic to make a paste and keep aside, Blend tomatoes to make a puree and keep aside
  4. Fine chop capsicum and onion
  5. Heat a deep pan , put in oil, add jeera, coriander seeds, aniseed and Bay leaf and let them cook on slow for a minute
  6. Add in Ginger garlic paste and roast for a minute
  7. Add in Chili powder and turmeric powder along with 2 spoon of water
  8. Mix it well and add in capsicum and onion and give it a good mix . Let them cook for 4-5 Min
  9. Add in Tomato puree and add in salt and give it a good mix. Let it cook on simmer, it will be done when the gravy consistency is reached (As in picture) (10 Min average time just to give you an idea)
  10. Add in potatoes and mix them add Amchur and a cup of water and let it simmer for another 5-10 Min, sprinkle garam masala over it
  11. Once the curry is ready, take it out in serving bowl and garnish with fresh coriander leaves
  12. Serve it as a side dish with Chapati , paratha or rice
